  • ⅓ cup buttermilk, cold

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine sliced peaches, ½ cup sugar, lemon juice, cornstarch, cinnamon, and salt. Toss gently and let macerate for 10 minutes.
  3. Transfer the peach mixture evenly into a 9-inch baking dish.
  4. In a medium bowl, whisk together flour, 2 tablespoons sugar, baking powder, baking soda, and salt.
  5. Add cold cubed butter and cut into the dry ingredients using a pastry cutter or fingertips until mixture resembles coarse crumbs with some pea-sized bits.
  6. Pour in cold buttermilk and stir gently just until dough comes together; do not overmix.
  7. Drop spoonfuls of biscuit dough over the peach filling, leaving some gaps.
  8. Bake for 35-40 minutes until biscuit topping is golden brown and peach filling bubbles around edges.
  9. Remove from oven and let cool for at least 10 minutes to thicken filling.
  10. Serve warm with vanilla ice cream or whipped cream and garnish with fresh mint if desired.
