These easy football-shaped Rice Krispie treats are the perfect game day snack. They come together in under twenty minutes using simple ingredients and look way more impressive than the effort they require.

  • 6 tablespoons unsalted butter (85g)
  • 10 oz mini marshmallows (283g, about 5 cups)
  • 6 cups Rice Krispies cereal (180g)
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips (90g)
  • 1 teaspoon coconut oil or shortening (optional)

Instructions

  1. Line a 9×13-inch baking dish with parchment paper, leaving about 2 inches of overhang on the two long sides. Lightly grease the parchment with butter or non-stick spray.
  2. In a large saucepan over medium-low heat, melt 6 tablespoons of unsalted butter. Stir occasionally until just melted, about 2 minutes. Do not let it brown.
  3. Add the mini marshmallows and stir constantly until fully melted and smooth, about 4-5 minutes.
  4. Remove the pan from the heat. Immediately stir in the salt and vanilla extract until well combined.
  5. Add the Rice Krispies cereal all at once. Fold gently until every piece of cereal is coated, about 1-2 minutes.
  6. Scrape the mixture into the prepared baking dish. Using a second piece of parchment paper or a lightly greased spatula, press into an even layer. Let cool at room temperature for about 20 minutes until firm.
  7. Lift the block out of the pan using the parchment overhang. Place on a cutting board. Use a football-shaped cookie cutter to press out shapes. You should get about 10-12 football shapes.
  8. In a microwave-safe bowl, combine chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring between each, until smooth and shiny, about 1-2 minutes.
  9. Transfer melted chocolate to a small piping bag or zip-top bag. Snip off a tiny corner. Pipe a straight line down the center of each football, then add small perpendicular lines for the laces.
  10. Let the chocolate set at room temperature for about 20 minutes, or refrigerate for 10 minutes until firm.

Notes

Don’t overheat the marshmallows or they become tough. Butter your tools to prevent sticking. Work quickly but gently to avoid crushing the cereal. Let treats cool completely before cutting. For best results, make the treats the day before and add chocolate laces on serving day.
