  • 2 large English cucumbers (or 3 medium Persian cucumbers)
  • 1 teaspoon fine sea salt
  • 1/2 cup sour cream (full-fat recommended)
  • 2 tablespoons white wine vinegar (or apple cider vinegar)
  • 1 tablespoon fresh dill, chopped (plus more for garnish)
  • 1 teaspoon granulated sugar
  • 1/4 teaspoon black pepper (freshly ground)
  • 1 small shallot, thinly sliced (optional)

Instructions

  1. Slice the cucumbers into thin rounds, about 1/8-inch thick.
  2. Place cucumber slices in a large bowl, sprinkle with salt, and toss well. Let sit for 15-20 minutes to draw out moisture.
  3. Transfer cucumbers to a colander, rinse briefly with cold water, then pat dry with a clean kitchen towel or paper towels.
  4. In a small bowl, whisk together sour cream, vinegar, dill, sugar, and black pepper. Taste and adjust seasoning. Stir in shallot if using.
  5. Place dried cucumber slices in a clean bowl, pour dressing over them, and toss gently to coat.
  6. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
  7. Serve cold, garnished with extra fresh dill.
