This creamy buffalo chicken dip is a late-night triumph and a crowd-pleaser, made with a secret ingredient—cottage cheese—for an ultra-creamy texture. Perfect for parties, game day, or any gathering, it comes together in under 30 minutes with simple ingredients.

Ingredients

Scale
  • 2 cups cooked chicken, shredded (rotisserie or canned)
  • 8 oz cream cheese, softened
  • 1 cup cottage cheese, full-fat (blended until smooth)
  • 1/2 cup sour cream
  • 3/4 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1 packet ranch dressing mix
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 cup crumbled blue cheese (optional)
  • Celery sticks, carrot sticks, and tortilla chips for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8 or 9×9 baking dish with non-stick spray or butter.
  2. In a blender or food processor, blend the cottage cheese until completely smooth (about 30 seconds). Set aside.
  3. In a large mixing bowl, beat the softened cream cheese with a spatula until smooth and fluffy. Add the blended cottage cheese, sour cream, buffalo sauce, ranch dressing mix, garlic powder, and onion powder. Stir until well combined.
  4. Fold in the shredded chicken, 1 cup of the shredded cheddar cheese, and the crumbled blue cheese (if using). Mix until evenly distributed. Taste and add more buffalo sauce if desired.
  5. Spoon the mixture into the prepared baking dish and spread into an even layer. Sprinkle the remaining 1/2 cup of shredded cheddar cheese on top.
  6. Bake for 20-25 minutes, or until the dip is bubbling around the edges and the cheese on top is melted and lightly golden.
  7. Let the dip cool for about 5 minutes before serving. Serve warm with celery sticks, carrot sticks, and tortilla chips.

Notes

For a milder dip, use only 1/2 cup of buffalo sauce. For a dairy-free option, use vegan cream cheese and dairy-free ranch mix. The dip can be assembled up to 24 hours in advance and refrigerated; add 5-10 minutes to baking time if starting from cold. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 2 months.
