Easy Cranberry Brie Bites with Puff Pastry

These cranberry brie bites are buttery, flaky puff pastry cups filled with creamy brie and tart, slightly sweet cranberry sauce. They come together in about twenty minutes and are the perfect appetizer for any gathering.

  • 1 sheet frozen puff pastry, thawed
  • 4 ounces brie cheese, cut into 24 small cubes (about 1/2-inch each)
  • 1/2 cup whole berry cranberry sauce
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • Flaky sea salt, for finishing
  • Fresh rosemary or thyme, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Position a rack in the center of the oven. Let the thawed puff pastry sit on the counter for about 10 minutes until cold but pliable.
  2. Lightly flour your work surface and unfold the puff pastry sheet. Gently roll it out to smooth creases, keeping it about 1/8-inch thick.
  3. Cut the pastry into 24 equal squares (about 2 inches each) using a sharp knife or pizza cutter.
  4. Press each square into a cup of a mini muffin tin, gently pressing into the bottom and up the sides, leaving the corners sticking up slightly. Prick the bottom of each cup with a fork.
  5. Pre-bake the pastry cups for 5 minutes. Remove from the oven and let cool for 2 minutes.
  6. While the pastry pre-bakes, cut the brie into 24 small cubes. Stir the cranberry sauce to loosen it.
  7. Fill each pastry cup: add about 1/2 teaspoon of cranberry sauce to the bottom, then place a cube of brie on top.
  8. Brush the edges of the pastry with the egg wash.
  9. Bake for 10-12 minutes, until the pastry is deep golden brown and the brie is melted and bubbly.
  10. Let cool in the pan for 5 minutes, then gently lift out with a small offset spatula or butter knife.
  11. Transfer to a serving platter, sprinkle with flaky sea salt and fresh rosemary or thyme, and serve warm.

Notes

Don’t skip the pre-bake step—it keeps the pastry crisp. Keep the brie cold for even melting. Watch the oven closely as puff pastry can burn quickly. You can assemble the bites up to 2 hours ahead and refrigerate; add 2-3 minutes to baking time.
