Ingredients

Scale
  • 3 ripe bananas, mashed
  • 1/2 cup unsalted butter (1 stick), browned and cooled slightly
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • For the Walnut Crumble Topping:
  • 1/2 cup walnuts, roughly chopped
  • 2 tablespoons brown sugar
  • 1 tablespoon unsalted butter, melted
  • 1/4 teaspoon ground cinnamon
  • A pinch of salt

Instructions

  1. Brown the Butter: In a small saucepan over medium heat, melt 1/2 cup unsalted butter. Stir frequently until it foams and turns golden brown with nutty aromas (about 4-6 minutes). Remove from heat and let cool slightly.
  2. Preheat the Oven and Prepare Loaf Pan: Set oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or line with parchment paper.
  3. Mash Bananas: In a large bowl, mash the ripe bananas with a fork until mostly smooth with a few lumps.
  4. Mix Wet Ingredients: Add browned butter, granulated sugar, brown sugar, eggs, and vanilla extract to the bananas. Whisk gently until combined.
  5. Combine Dry Ingredients: In a separate bowl, sift or whisk together flour, baking soda, salt, and cinnamon.
  6. Fold Dry into Wet: Gradually add dry ingredients to wet banana mixture. Stir gently with a spatula until just combined; avoid overmixing.
  7. Prepare Walnut Crumble: In a small bowl, combine chopped walnuts, brown sugar, melted butter, cinnamon, and a pinch of salt. Mix until walnuts are evenly coated.
  8. Pour Batter into Pan: Spread batter evenly in prepared loaf pan. Sprinkle walnut crumble topping evenly over batter.
  9. Bake: Bake for 50-60 minutes. Start checking at 50 minutes by inserting a toothpick into the center; it should come out with a few moist crumbs, not wet batter.
  10. Cool: Let bread cool in pan for 10-15 minutes, then transfer to a cooling rack. The crumble topping should be crisp and golden.

Notes

Watch the butter carefully when browning to avoid burning. Do not overmix the batter to keep the bread tender. Toast walnuts before mixing for extra crunch and flavor. Tent with foil if the crumble browns too quickly after 40 minutes. Use room temperature eggs for better texture.
