These crispy Parmesan zucchini fritters are an easy homemade snack featuring a crunchy, cheesy exterior and tender zucchini inside, served with a fresh garlic herb sauce.

  • 2 medium zucchinis, grated and squeezed dry (about 3 cups grated)
  • 1/2 cup (50 g) finely grated Parmesan cheese
  • 2 large eggs, room temperature
  • 1/3 cup (40 g) all-purpose flour (can substitute almond flour for gluten-free)
  • 1 clove garlic, minced
  • 2 tablespoons fresh parsley and chives, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil, for frying
  • For the garlic herb sauce:
  • 1/2 cup (120 ml) Greek yogurt or sour cream (dairy-free yogurt can be used)
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 tablespoon fresh parsley and chives, chopped
  • Salt and pepper, to taste

Instructions

  1. Grate 2 medium zucchinis (about 3 cups grated). Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. Discard the liquid.
  2. In a large bowl, combine the grated zucchini, Parmesan cheese, eggs, flour, minced garlic, chopped parsley and chives, salt, and black pepper. Stir until just combined, avoiding overmixing.
  3. Heat 2 tablespoons of olive oil in a non-stick or cast-iron skillet over medium heat until shimmering but not smoking.
  4. Using a 1/4 cup measure or spoon, scoop batter and gently place into the hot skillet, flattening slightly to form 3-inch rounds. Fry for 3-4 minutes on each side until golden brown and crispy. Fry in batches if needed to avoid overcrowding.
  5. Transfer cooked fritters to a paper towel-lined plate to drain excess oil. Keep warm in a low oven (200°F / 90°C) if frying multiple batches.
  6. While fritters cook, mix Greek yogurt or sour cream with minced garlic, lemon juice, chopped parsley and chives, salt, and pepper. Stir well and refrigerate until serving.
  7. Serve the fritters warm with a dollop of garlic herb sauce on the side or drizzled over the top. Garnish with extra herbs or Parmesan if desired.

Squeeze out as much moisture as possible from the zucchini to ensure crispy fritters. Use fresh Parmesan cheese for best flavor and crust. Maintain medium heat to avoid burning or sogginess. Batter can rest for 10 minutes before frying for better texture. Batter can be refrigerated up to 24 hours before cooking. For gluten-free, substitute flour with almond or chickpea flour. Vegan options include flax egg and dairy-free Parmesan alternatives. Fritters can be baked at 400°F for 15-20 minutes, flipping halfway.
