  • 1/4 cup pure maple syrup
  • 2 tablespoons avocado oil or olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Parmesan cheese for garnish

Instructions

  1. Preheat oven to 425°F (220°C) and let it fully preheat for at least 15 minutes.
  2. Wash the squash, cut off both ends, slice in half lengthwise, and scoop out seeds and stringy bits.
  3. Slice each half into 1/2-inch thick half-moons, keeping the skin on.
  4. In a large bowl, toss squash slices with avocado oil, smoked paprika, cinnamon, garlic powder, salt, and black pepper until evenly coated.
  5. Spread squash in a single layer on a parchment-lined baking sheet, ensuring pieces are not touching.
  6. Roast for 15 minutes to dry out the surface and start crisping.
  7. Remove from oven, drizzle with maple syrup, and gently toss to coat.
  8. Return to oven and roast for another 15-20 minutes, checking halfway, until edges are golden brown and centers are tender.
  9. Let rest for 5 minutes before serving to allow syrup to set.

Notes

Do not crowd the pan to ensure crispiness rather than steaming. Pat squash dry before oiling. Add maple syrup halfway through cooking to prevent burning. Can be prepped up to 24 hours in advance (add syrup before second roast). Reheat in oven or air fryer to restore crispiness.
