  • 4 medium large Russet potatoes
  • 8 slices thick-cut bacon
  • 2 cups sharp cheddar cheese, shredded
  • 1/2 cup sour cream
  • 3 stalks green onions, chopped
  • 2 tablespoons vegetable oil or bacon grease
  • Kosher salt and black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
  2. Scrub potatoes clean, dry thoroughly, and pierce 4-5 times with a fork. Rub with oil and sprinkle with salt.
  3. Bake potatoes for 45-60 minutes until tender. Let cool for 10 minutes.
  4. While potatoes bake, cook bacon in a skillet over medium heat until crispy. Drain on paper towels, crumble, and reserve the grease.
  5. Cut cooled potatoes in half lengthwise. Scoop out insides, leaving a 1/4-inch border.
  6. Brush shells with reserved bacon grease or oil and sprinkle with salt. Bake for 10 minutes to crisp.
  7. Remove from oven, sprinkle with shredded cheddar and crumbled bacon.
  8. Return to oven for 5-7 minutes until cheese is melted and bubbly.
  9. Garnish with chopped green onions and serve immediately.

For best results, shred your own cheese to avoid anti-caking agents. Use the double-bake method to ensure crispy skins. Serve immediately as they lose crispness quickly. Reheat in the oven or air fryer, not the microwave.
