  • 6 oz wheel of brie cheese, sliced into thin rounds

  • 1 large egg, beaten with 1 teaspoon water (for egg wash)

  • Optional: Fresh thyme or rosemary, finely chopped

Instructions

  1. Preheat oven to 400°F (200°C) and place a rack in the center.
  2. Thaw puff pastry sheets at room temperature for 30-40 minutes until pliable but cold.
  3. Slice brie into thin rounds; remove rind if preferred.
  4. Roll out each pastry sheet into a 12×12 inch square and cut into 16 smaller squares (32 total).
  5. Place a slice of brie in the center of each square, topped with a small dollop of cranberry sauce.
  6. Fold the corners of the pastry over the filling to seal, creating a packet.
  7. Brush the tops with the egg wash mixture.
  8. Bake on parchment-lined baking sheets for 15-18 minutes until puffed and golden brown, rotating halfway through.
  9. Cool for 5 minutes, sprinkle with flaky salt and herbs, and serve warm.

Notes

Keep the pastry cold until baking to ensure flaky layers. Ensure cranberry sauce is thick to prevent sogginess. These can be assembled ahead and refrigerated for up to 24 hours, or frozen before baking. Reheat in a 350°F oven for 5-7 minutes.
