  • 1/4 teaspoon Ground Ginger
  • 3/4 cup (150g) Granulated Sugar
  • 1/4 cup (50g) Light Brown Sugar
  • 1/2 cup (115g) Unsalted Butter, melted and cooled slightly
  • 1/2 cup (120g) Pumpkin Puree
  • 2 Large Eggs, room temperature
  • 1 teaspoon Vanilla Extract
  • 1/2 cup (100g) Granulated Sugar (for coating)
  • 1 tablespoon Ground Cinnamon (for coating)
  • 2 tablespoons Butter, melted (for coating)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger until evenly combined.
  3. In a separate medium bowl, whisk the melted butter, granulated sugar, and brown sugar until the mixture resembles wet sand.
  4. Add the eggs one at a time to the wet mixture, whisking gently after each addition. Stir in the pumpkin puree and vanilla extract until smooth.
  5. Pour the wet ingredients into the dry ingredients. Use a spatula to fold them together until just combined; stop mixing as soon as the flour disappears to avoid dense muffins.
  6. Divide the batter evenly among the 12 muffin cups, filling each about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. While muffins bake, mix the coating ingredients: 1/2 cup sugar and 1 tablespoon cinnamon in a shallow bowl.
  9. As soon as muffins are removed from the oven, let them cool in the pan for 2 minutes.
  10. Brush the warm tops of the muffins lightly with the 2 tablespoons of melted butter.
  11. Immediately roll the buttered tops in the cinnamon sugar mixture to create a crispy crust.
  12. Transfer to a wire rack to cool for 5 minutes before serving.

Notes

Do not overmix the batter to ensure tender muffins. Use room temperature eggs to prevent the butter from seizing. Coat the muffins while they are still warm for the best adhesion of the sugar crust. For gluten-free, use a 1-to-1 gluten-free flour blend. For dairy-free, substitute butter with plant-based butter or coconut oil.
