  • 3 cups cooked shredded chicken (from about 1 ½ pounds chicken breasts or a rotisserie chicken)

  • Shredded Monterey Jack cheese (for serving)
  • Crushed tortilla chips or crispy tortilla strips (for serving)

Instructions

  1. Sauté the aromatics: Heat the olive oil in a Dutch oven over medium heat. Add the diced onion and cook for 5 to 7 minutes, until soft and translucent. Add the minced garlic and cook for 1 more minute, stirring constantly.
  2. Toast the spices: Add the cumin, oregano, smoked paprika, cayenne (if using), and a pinch of salt and pepper. Stir and cook for about 30 seconds.
  3. Build the broth: Pour in the chicken broth and bring to a gentle simmer. Add the drained cannellini beans and diced green chiles. Let cook for 10 minutes.
