  • 1 (28-ounce) can whole tomatoes (preferably San Marzano)
  • 1 medium yellow onion, chopped
  • 1 medium carrot, peeled and roughly chopped
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 cup vegetable broth (low-sodium)
  • ½ cup whole milk
  • ½ teaspoon salt (fine sea salt, plus more to taste)
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon butter (optional)

Instructions

  1. Sauté the vegetables: Heat olive oil in a large pot over medium heat. Add chopped onion, carrot, and a pinch of salt. Cook for 5-7 minutes, stirring occasionally, until onion is soft and translucent.
  2. Add garlic: Toss in minced garlic and cook for another minute, stirring constantly to prevent burning.
  3. Add tomatoes and broth: Pour in the entire can of whole tomatoes with their juices, breaking them up with a spoon. Add vegetable broth and stir. Bring to a gentle simmer, then reduce heat to low.
  4. Simmer until carrot is tender: Let soup cook for 15-20 minutes until carrot can be easily pierced with a fork.
  5. Blend until smooth: Remove pot from heat. Use an immersion blender to blend soup directly in the pot until completely smooth. If using a regular blender, let soup cool for 5 minutes, then blend in batches (fill blender no more than halfway).
  6. Stir in milk and butter: Return blended soup to pot (if using regular blender) and place over low heat. Stir in milk and optional butter. Warm through for 2-3 minutes without boiling.
  7. Season and serve: Taste and add more salt and pepper as needed. Serve warm with grilled cheese or crackers.

Notes

If soup is too thick after blending, add a splash more broth or milk. If too thin, simmer uncovered for a few minutes. For extra acidity sensitivity, add a pinch of baking soda before blending. Soup tastes even better the next day.
