  • 1.5 lbs beef stew meat, cut into 1-inch cubes
  • 8 oz cremini mushrooms, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup beef broth, low sodium
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 8 oz Philadelphia Style Cream Cheese, softened
  • 1/2 cup sour cream, full-fat
  • 1/2 cup heavy cream
  • 1 tsp dried parsley
  • 1/2 tsp dried thyme
  • 8 oz egg noodles
  • 2 tbsp butter
  • Paprika, for garnish
  • Salt and pepper to taste

Instructions

  1. Cut the beef into 1-inch cubes. Slice the mushrooms and dice the onion. Mince the garlic.
  2. Add the beef, mushrooms, onion, and garlic to the slow cooker. Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Stir gently to combine.
  3. Cover and cook on low for 6 to 8 hours, or on high for 3-4 hours, until the beef is tender.
  4. In a small bowl, whisk together the softened cream cheese, sour cream, heavy cream, dried parsley, and dried thyme until smooth.
  5. Once the beef is tender, turn off the slow cooker. Stir in the cream cheese mixture. The residual heat will melt it. If lumps remain, stir vigorously or use an immersion blender briefly.
  6. While the stroganoff finishes, cook the egg noodles according to package directions. Drain and toss with butter.
  7. Ladle the creamy beef mixture over the noodles. Garnish with paprika and fresh parsley. Serve immediately.

Notes

Do not cook the noodles in the slow cooker as they will absorb too much liquid and become mushy. Ensure cream cheese is fully softened before adding to prevent lumps. Add dairy products at the very end using residual heat to prevent curdling. Leftovers keep for 3 days in the fridge or can be frozen for 3 months (freeze sauce and beef separately from noodles).
