  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth (low-sodium)
  • 2 bay leaves
  • 1 pound Italian sausage (mild or hot), removed from casings
  • 2 large Yukon Gold potatoes, peeled and cubed
  • ½ cup heavy cream (optional)
  • Salt and black pepper, to taste
  • 2 cups curly kale, stems removed and chopped
  • ¼ teaspoon red pepper flakes

Instructions

  1. Heat a large Dutch oven over medium-high heat. Add the Italian sausage, broken into small crumbles, and cook for 5-7 minutes until browned and cooked through. Drain excess grease, leaving about a tablespoon.
  2. Reduce heat to medium. Add butter to the pot. Once melted, add the diced onion and cook for 3-4 minutes until translucent. Add minced garlic and cook for 1 minute.
  3. Add cubed potatoes, chicken broth, and bay leaves. Stir to scrape up browned bits from the bottom. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until potatoes are tender.
  4. Remove bay leaves. Stir in chopped kale and simmer for 2-3 minutes until wilted and bright green.
  5. If desired, stir in heavy cream and warm through for another minute.
  6. Season with salt, black pepper, and red pepper flakes. Serve hot.

Notes

For a lighter version, use chicken breast and smoked paprika. For a vegetarian option, use vegetable broth and mushrooms. To freeze, omit the cream and add fresh cream when reheating. The soup will thicken as it cools; add a splash of broth or water when reheating.
