A simple, no-cook breakfast made by soaking rolled oats in almond milk with peanut butter and banana overnight. It offers a creamy, satisfying texture perfect for busy mornings.

  • 1 cup unsweetened almond milk
  • 2 tablespoons creamy peanut butter
  • 1 ripe banana
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon honey or maple syrup (optional)
  • 1 pinch cinnamon

Instructions

  1. Peel the ripe banana and mash it thoroughly against the bottom of a mason jar until it forms a smooth paste.
  2. Pour in the almond milk, add the peanut butter, chia seeds, honey/maple syrup, and cinnamon.
  3. Stir the mixture vigorously with a fork or whisk to break up the peanut butter and incorporate it into the milk.
  4. Add the rolled oats and stir gently to ensure they are submerged in the liquid.
  5. Seal the jar tightly and refrigerate for at least 4 hours, preferably overnight (8-12 hours).
  6. In the morning, remove from the fridge, give it a good stir, and add a splash of milk if the mixture is too thick.
  7. Serve cold, optionally topped with sliced banana or extra peanut butter.

Notes

Use old-fashioned rolled oats, not quick oats, to maintain texture. Ensure the banana is ripe for natural sweetness. If the oats are too hard after soaking, ensure they were fully submerged. For a protein boost, add a scoop of protein powder.
