A quick and easy one-pot Tuscan garlic chicken recipe featuring a creamy sauce with sun-dried tomatoes and fresh spinach, perfect for cozy weeknight dinners.

Ingredients

Scale
  • 1.5 pounds boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1/3 cup chopped sun-dried tomatoes (oil-packed)
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 4 ounces cream cheese, softened
  • 4 cups fresh baby spinach (about 120 grams)
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken thighs and cook 5-6 minutes per side until golden brown and cooked through. Remove chicken and set aside.
  3. Reduce heat to medium. Add minced garlic and chopped sun-dried tomatoes to the skillet. Stir for 1-2 minutes until fragrant.
  4. Pour in chicken broth and deglaze the pan, scraping up browned bits. Simmer for 2-3 minutes to reduce slightly.
  5. Stir in heavy cream and softened cream cheese. Cook over medium-low heat, stirring continuously until cream cheese melts and sauce is smooth, about 3-4 minutes. Add more broth or cream if sauce is too thick.
  6. Return chicken to the skillet. Add fresh spinach around and on top of the chicken. Cover and cook for 3-4 minutes until spinach wilts but remains bright green.
  7. Adjust seasoning with salt and pepper. If desired, sprinkle grated Parmesan cheese over the top and stir gently to melt.
  8. Serve warm, spooning the creamy Tuscan garlic chicken with spinach onto plates or directly from the skillet.

Notes

Pat chicken dry before cooking for better browning. Use medium heat when melting cream cheese to avoid sauce separation. Use oil-packed sun-dried tomatoes for richer flavor; soak dry-packed in warm water before chopping. Let chicken rest a few minutes before serving to keep it tender. Sauce can be loosened with extra broth or cream if too thick.
