A quick, comforting, and velvety smooth soup made with simple ingredients in a single pot. Perfect for busy weeknights or potlucks, this dish balances sweet squash with savory aromatics and warm spices.

  • 2 to 3 pounds butternut squash, peeled and cubed
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 tablespoons unsalted butter (or olive oil for dairy-free)
  • 4 cups low-sodium vegetable or chicken broth
  • 1/2 cup heavy cream or full-fat coconut milk
  • 1/4 teaspoon ground nutmeg
  • Salt and black pepper, to taste
  • A few sprigs fresh thyme or 1 teaspoon dried thyme

Instructions

  1. Peel the butternut squash, remove seeds, and cut into 1-inch cubes. Dice the onion and mince the garlic.
  2. Heat butter in a large Dutch oven or heavy-bottomed pot over medium heat. Add diced onion and sauté for 5 minutes until translucent.
  3. Add minced garlic and cook for 1 minute, stirring constantly to prevent burning.
  4. Add cubed squash, broth, thyme, and a pinch of salt and pepper. Stir to combine.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes until squash is tender and easily pierced with a fork.
  6. Remove from heat. Use an immersion blender to puree the soup directly in the pot until smooth, or blend in batches in a standard blender.
  7. Stir in heavy cream or coconut milk. Warm over low heat for 2 minutes (do not boil).
  8. Taste and adjust seasoning with salt, pepper, or nutmeg. Serve hot, garnished with fresh herbs or a drizzle of cream.

Notes

If using frozen squash, simmer slightly longer to thicken. For a thinner soup, add more broth. For a thicker soup, simmer uncovered. Do not boil after adding cream to prevent curdling. Can be stored in the fridge for 4 days or frozen for 3 months (freeze without cream if possible).
