Ingredients

  • 2 cans (15 oz / 425 g each) cannellini or great northern beans, drained and rinsed (or 1½ cups cooked dried beans)
  • 4 cups chopped kale, ribs removed (about one bunch, roughly 120 g)
  • 1 medium yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 4 cups (32 fl oz / 950 ml) low sodium vegetable broth
  • ½ cup (4 fl oz / 120 ml) heavy cream or coconut cream
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary, crushed
  • Pinch of red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 tablespoon fresh lemon juice

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet or soup pot over medium heat until shimmering, about 1-2 minutes.
  2. Add the chopped onion and cook until soft and translucent, about 5 minutes. Add minced garlic and cook for another 1 minute until fragrant but not browned.
  3. Stir in dried thyme, rosemary, and red pepper flakes; toast lightly for 30 seconds.
  4. Pour in vegetable broth and add drained white beans. Stir to combine, scraping any bits off the bottom.
  5. Bring soup to a gentle simmer, then add chopped kale. Cover with a lid and cook for 10-12 minutes until kale is tender but still vibrant green.
  6. Optional: Use an immersion blender to pulse the soup a few times for extra creaminess, leaving some beans whole. Alternatively, mash a handful of beans against the pot side with a spoon.
  7. Stir in heavy cream or coconut cream gently. Season with salt and black pepper to taste.
  8. Add fresh lemon juice, stir once more, and serve warm.
