  • 2 cups whole milk
  • 1 cup chicken broth (low-sodium)
  • 2 medium shallots, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 tablespoon soy sauce
  • 1 cup crispy fried onions
  • Salt and black pepper to taste
  • Pinch of nutmeg

Instructions

  1. Wash, trim, and cut green beans into 2-inch pieces. Set aside in a colander.
  2. Bring a large pot of salted water to a boil. Blanch green beans for 3-4 minutes until tender-crisp. Transfer to an ice bath to stop cooking, then drain well.
  3. In a large skillet or Dutch oven, melt butter over medium heat. Add diced shallots and a pinch of salt; cook for 3-4 minutes until softened.
  4. Add minced garlic and cook for 30 seconds until fragrant.
  5. Sprinkle flour over the butter and shallot mixture. Whisk constantly for 1-2 minutes to create a roux.
  6. Gradually whisk in chicken broth, then add milk. Cook until the sauce thickens enough to coat the back of a spoon (3-5 minutes).
  7. Stir in Dijon mustard, soy sauce, salt, pepper, and nutmeg.
  8. Add blanched green beans to the sauce and stir to coat evenly.
  9. Preheat oven to 350°F (175°C). Pour mixture into a 9×13 inch baking dish.
  10. Top with crispy fried onions.
  11. Bake for 15-20 minutes until bubbling and onions are golden brown. Let rest for 5 minutes before serving.

Notes

For a gluten-free version, use a 1:1 gluten-free flour blend or cornstarch. For a vegan version, substitute chicken broth with vegetable broth and use plant-based butter. To keep onions crispy, add them just before serving or fry fresh onions yourself. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven.
