  • 2 medium English cucumbers, thinly sliced
  • 2 tablespoons fresh dill, finely chopped
  • 3 tablespoons white wine vinegar
  • 1/3 cup (80 ml) sour cream or Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt (to taste)
  • Fresh ground black pepper (to taste)
  • Optional: 1 small clove garlic, minced

Instructions

  1. Rinse and dry 2 medium English cucumbers. Slice them thinly, about 1/8-inch (3 mm) thickness. Optionally peel strips of the skin for a striped look.
  2. Place cucumber slices in a colander, sprinkle with 1/2 teaspoon salt, and toss gently. Let sit for 10 minutes to draw out excess water.
  3. In a medium bowl, whisk together 1/3 cup sour cream, 2 tablespoons mayonnaise, 3 tablespoons white wine vinegar, 1 teaspoon sugar, and freshly ground black pepper to taste. Stir in minced garlic if using. Whisk until smooth and creamy.
  4. After 10 minutes, gently squeeze cucumber slices to remove remaining moisture.
  5. Add cucumbers to the dressing bowl. Toss gently to coat all slices evenly.
  6. Sprinkle in 2 tablespoons finely chopped fresh dill and toss again. Taste and adjust salt or pepper if needed.
  7. Cover the salad with plastic wrap and refrigerate for at least 30 minutes before serving to let flavors meld.

Salt cucumbers early to draw out moisture and prevent a watery salad. Slice cucumbers about 1/8-inch thick for best texture. Chill salad for at least 30 minutes before serving to meld flavors and thicken dressing. Best eaten within 24 hours. For dairy-free version, substitute sour cream and mayo with vegan alternatives and use apple cider vinegar instead of white wine vinegar.
