A quick and easy slow cooker white chicken chili that is creamy, comforting, and perfect for busy weeknights or potlucks. Made with simple ingredients like chicken, white beans, corn, and cream cheese.

  • 2–3 lbs boneless, skinless chicken breasts
  • 2 cans (15 oz each) Great Northern beans or cannellini beans, drained and rinsed
  • 1 can (15 oz) whole kernel corn, drained, or 2 cups frozen corn
  • 1 can (4 oz) diced green chiles
  • 4 cups low-sodium chicken broth
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 8 oz full-fat cream cheese, cut into cubes
  • 1 cup Monterey Jack or cheddar cheese, shredded
  • 4 green onions, sliced (for garnish)
  • Salt and pepper to taste
  • Optional: Cayenne pepper or red pepper flakes for heat

Instructions

  1. Dice the onion and mince the garlic. Rinse the beans and corn thoroughly.
  2. Place the diced onion, minced garlic, drained beans, corn, green chiles, and cumin into the slow cooker. Stir gently.
  3. Place the chicken breasts on top of the vegetable mixture. Pour the chicken broth over everything. Do not stir the chicken in yet.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken reaches 165°F and shreds easily.
  5. Remove chicken breasts and shred into bite-sized pieces using two forks. Discard any fat or skin.
  6. Return shredded chicken to the slow cooker. Add cubed cream cheese. Cover and cook on high for 15-20 minutes until cream cheese is melted.
  7. Stir gently to incorporate the cream cheese. Stir in the shredded Monterey Jack or cheddar cheese.
  8. Taste and season with salt and pepper as needed. Add cayenne or red pepper flakes if desired.
  9. Ladle into bowls and garnish with sliced green onions, extra cheese, or sour cream. Serve with tortilla chips or cornbread.

Notes

For a thicker chili, mash some beans against the side of the pot before adding cream cheese. If using frozen chicken, add directly to the pot and cook for an additional 1-2 hours. To make dairy-free, swap cream cheese for a dairy-free alternative. To make vegetarian, swap chicken for extra beans and use vegetable broth.
