  • 8 ounces cream cheese, softened and cubed

  • 3 cloves garlic, minced
  • ½ cup heavy cream (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • Optional garnishes: fresh parsley, shredded cheddar cheese, crispy bacon bits, green onions

Instructions

  1. Brown the sausage (optional but recommended): Heat a large skillet over medium-high heat. Add the sliced sausage and cook for 5-7 minutes, stirring occasionally, until the edges are browned and crispy.
  2. Layer the ingredients: Place the diced potatoes, browned sausage, and diced onion in the bottom of your slow cooker. Sprinkle the minced garlic, salt, pepper, thyme, and smoked paprika over the top. Do not stir yet.
  3. Add the broth: Pour the chicken broth over everything. It should just barely cover the potatoes. If it does not, add a splash more broth or water.
  4. Cook on low: Cover and cook on low for 6-7 hours, or on high for 3-4 hours, until the potatoes are fork-tender.
  5. Add the cream cheese: About 30 minutes before serving, cube the softened cream cheese and drop it into the soup. Stir gently until it melts completely and the broth turns creamy and pale.
  6. Finish with heavy cream: Stir in the heavy cream. Taste and adjust seasonings. Let it cook for another 10 minutes to meld the flavors.
  7. Thicken if desired: Use an immersion blender to pulse 2-3 times, or mash some of the potatoes against the side of the pot with a wooden spoon.
  8. Serve and garnish: Ladle the soup into bowls. Top with shredded cheddar, crispy bacon, fresh parsley, or a drizzle of olive oil. Serve with crusty bread for dipping.

Notes

For best results, let cream cheese come to room temperature before adding to prevent clumping. Brown the sausage for extra flavor. If soup is too thin, mash some potatoes or stir in a cornstarch slurry. Store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months.
