Creamy Crockpot Garlic Parmesan Chicken and Rice

A comforting and easy slow cooker recipe featuring tender chicken breasts, creamy garlic parmesan sauce, and perfectly cooked rice. Ideal for busy weeknights and cozy dinners.

  • 4 boneless, skinless chicken breasts
  • 1 cup long grain white rice (190 g)
  • 2 ½ cups chicken broth (600 ml), preferably low sodium
  • ½ cup heavy cream (120 ml)
  • ¾ cup grated Parmesan cheese (75 g), preferably fresh
  • 4 garlic cloves, minced
  • 2 tablespoons butter (28 g)
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Rinse and pat dry the chicken breasts. Season both sides lightly with salt, black pepper, and onion powder (about ½ teaspoon salt and ¼ teaspoon pepper per side).
  2. Optional: Melt butter in a small pan over medium heat and sauté minced garlic for 1-2 minutes until fragrant and slightly golden. Transfer garlic butter to the slow cooker.
  3. Pour dry rice into the slow cooker, spreading it evenly. Add chicken broth and heavy cream. Gently stir to combine with the garlic butter mixture.
  4. Nestle the seasoned chicken breasts on top of the rice mixture without stirring them in.
  5. Cover and cook on LOW for 4 to 5 hours or on HIGH for 2 to 2 ½ hours, until rice is tender and chicken reaches an internal temperature of 165°F (74°C).
  6. About 10 minutes before serving, sprinkle grated Parmesan cheese over the chicken and rice. Gently stir to combine and let the cheese melt.
  7. Taste and adjust seasoning with salt and pepper if needed. Sprinkle fresh chopped parsley on top before serving.

Notes

Sautéing garlic in butter before adding to the slow cooker enhances flavor but is optional. Use fresh grated Parmesan for best melting and taste. Avoid stirring chicken into rice during cooking to keep chicken tender. If dish is too thick after cooking, stir in a splash of chicken broth or cream. Opening the lid frequently can cause undercooked rice. Adjust liquid if cooking at high altitude or with an older slow cooker.
