  • 8 ounces block cream cheese, softened to room temperature
  • 1 cup creamy ranch dressing
  • 1/2 cup buffalo hot sauce (e.g., Frank’s RedHot)
  • 1 cup cooked, crumbled thick-cut bacon
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Cook bacon in a small skillet over medium heat until crispy (10-12 minutes). Drain on paper towels and crumble into small pieces.
  2. Cut cream cheese into cubes and let sit at room temperature for 30 minutes, or microwave in 15-second intervals until soft but not melted.
  3. In a large skillet over low heat, combine softened cream cheese, ranch dressing, and buffalo hot sauce. Stir constantly with a wooden spoon for 5-7 minutes until smooth and creamy. Do not let it boil.
  4. Stir in the shredded chicken and mix well until coated. Heat through for 2-3 minutes until the chicken is hot.
  5. Remove from heat. Stir in half of the crumbled bacon and half of the cheddar cheese.
  6. Transfer to a serving dish. Top with the remaining bacon and cheese. Serve warm.

Notes

Do not rush the heat when melting cream cheese; low and slow prevents seizing. Use block cream cheese, not spreadable tubs, to avoid a watery dip. Avoid pre-shredded cheese as anti-caking agents prevent smooth melting. If the dip is too thick, add a splash of milk or extra ranch. If too thin, let it cool slightly. This dip does not freeze well due to the cream cheese.
