Creamy Brown Butter Sage Turkey Gravy

A rich, nutty, and silky smooth gravy made with browned butter, fresh sage, and heavy cream. This quick and easy recipe adds a sophisticated depth of flavor to holiday turkey or leftover meals.

  • 1/2 cup (115g) unsalted butter
  • 1/4 cup (30g) all-purpose flour
  • 10–12 fresh sage leaves
  • 2 cups (480ml) chicken or turkey broth (low-sodium)
  • 1/4 cup (60ml) heavy cream
  • Salt and black pepper to taste
  • Optional: Tiny pinch of nutmeg

Instructions

  1. Rinse and pat dry sage leaves, removing them from stems. Tear large leaves in half.
  2. Melt butter in a medium saucepan over medium heat. Swirl occasionally until it foams, turns light amber, and smells nutty (5-7 minutes). Watch closely to avoid burning.
  3. Add sage leaves to the browned butter and stir for 30 seconds to infuse flavor. Remove from heat briefly if needed.
  4. Sprinkle flour over the butter and sage. Whisk constantly for 1-2 minutes to cook the flour and form a thick paste (roux).
  5. Slowly pour in warm broth while whisking vigorously, adding in stages to prevent lumps. Continue until all broth is incorporated and the mixture is smooth.
  6. Return pan to medium-low heat and simmer for 5-10 minutes, stirring occasionally, until the gravy thickens.
  7. Stir in heavy cream and warm through for 1-2 minutes. Season with salt, pepper, and optional nutmeg.
  8. Strain through a fine-mesh sieve for a ultra-smooth texture, or leave sage leaves in for texture.

Notes

Use warm broth to prevent the fat from solidifying. Brown butter carefully as it can burn quickly. For a dairy-free version, use vegan butter and coconut cream. For gluten-free, use a 1:1 GF flour blend or cornstarch slurry. The gravy can be made ahead and reheated gently with added broth.
