  • 2 tablespoons lemon juice
  • 1/4 cup brown sugar, packed (preferably dark brown sugar)
  • 1 teaspoon vanilla extract

  • 1/4 teaspoon ground nutmeg (optional)
  • 2 teaspoons cornstarch
  • 3/4 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour (can substitute almond flour for gluten-free)
  • 1/3 cup brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter, cold and diced
  • Vanilla ice cream or frozen yogurt for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and slice 4-5 large peaches into roughly 1/2-inch thick slices. Toss them in a bowl with 2 tablespoons lemon juice.
  3. Add 1/4 cup packed dark brown sugar, 1 teaspoon vanilla extract, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 2 teaspoons cornstarch to the peaches. Stir gently until evenly coated.
  4. Transfer the peach mixture into a 10-inch cast iron skillet, spreading it out evenly.
  5. In a separate bowl, combine 3/4 cup rolled oats, 1/2 cup all-purpose flour, 1/3 cup brown sugar, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt. Add 6 tablespoons cold, diced unsalted butter.
  6. Use a pastry cutter or your fingertips to work the butter into the dry ingredients until crumbly with pea-sized bits of butter visible.
  7. Evenly sprinkle the oat crumble over the peaches in the skillet without pressing it down.
  8. Bake uncovered for 35-40 minutes until the topping is golden brown and crisp and the peach filling bubbles around the edges. Tent with foil if topping browns too quickly.
  9. Remove from oven and let cool for about 10 minutes to thicken the juices.
  10. Serve warm with generous scoops of vanilla ice cream.

Notes

If peaches are very juicy, let the crisp rest longer after baking to thicken. Use cold butter for the crumble topping to achieve a crumbly texture. Fresh peaches are best, but frozen or canned peaches can be used if drained well. For gluten-free, substitute flour with almond or gluten-free flour. For dairy-free, use coconut oil instead of butter and plant-based ice cream.
