Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper.
  2. In a medium bowl, whisk together 1 ½ cups flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger. Set aside.
  3. In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy (3-4 minutes).
  4. Beat in eggs one at a time, then mix in vanilla extract.
  5. Reduce mixer speed to low. Add dry ingredients in three additions, alternating with pumpkin puree in two additions, starting and ending with dry ingredients. Mix just until combined.
  6. Gently fold in chocolate chips with a spatula.
  7. In a small bowl, combine streusel ingredients (½ cup flour, ¼ cup brown sugar, ½ tsp cinnamon, ¼ cup cold butter) until mixture resembles coarse crumbs.
  8. Pour batter into prepared loaf pan and smooth top. Sprinkle streusel evenly over batter.
  9. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out with moist crumbs. Tent with foil if browning too quickly after 40 minutes.
  10. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
