  • ⅛ teaspoon ground cloves (optional)
  • 1 cup (245 grams) pumpkin puree (not pumpkin pie filling)
  • ½ cup (160 grams) maple syrup (real maple syrup)
  • ⅓ cup (80 ml) vegetable oil
  • 2 large eggs, at room temperature
  • ¼ cup (60 ml) milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • 1 cup (175 grams) semi-sweet chocolate chips

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners.
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves (if using).
  3. In a separate large bowl, whisk together pumpkin puree, maple syrup, vegetable oil, eggs, milk, and vanilla extract until smooth.
  4. Microwave the wet mixture for 15-20 seconds until slightly warm, then let sit for 1 minute to bloom the spices.
  5. Pour the wet ingredients into the dry ingredients and fold gently with a rubber spatula until just combined. Do not overmix; a few lumps are fine.
  6. Fold in the chocolate chips, reserving about 2 tablespoons for topping.
  7. Divide the batter evenly among the muffin cups, filling each about ¾ full. Sprinkle reserved chocolate chips on top and press in slightly.
  8. Bake on the middle rack for 18-22 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Let muffins cool in the pan for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

For best results, use real maple syrup (Grade B or Dark Color for stronger flavor). Do not overmix the batter. Let muffins cool in the pan for 5 minutes before transferring to a rack. Muffins taste even better the next day.
