  • 1/4 cup milk (any kind; whole milk recommended)
  • 1 tablespoon brown sugar
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla extract (pure vanilla preferred)
  • 1 cup strong brewed coffee (or 2 shots espresso)
  • 1/2 cup milk (for steaming/frothing)
  • Whipped cream (optional, for topping)
  • Pinch of cinnamon (for garnish)
  • 1 teaspoon pumpkin pie spice (for dusting)

Instructions

  1. Make the pumpkin base: In a small saucepan, combine pumpkin puree, 1/4 cup milk, brown sugar, pumpkin pie spice, and vanilla extract. Whisk until mostly combined.
  2. Blend until smooth: Pour the mixture into a blender (or use an immersion blender). Blend on low for about 30 seconds until completely smooth and spices are fully incorporated.
  3. Heat the milk: Pour the remaining 1/2 cup milk into the saucepan and heat over medium-low heat until hot but not boiling (about 150°F to 160°F). Look for small bubbles forming around the edges.
  4. Froth the milk: Remove from heat and froth using a milk frother. Alternatively, pour hot milk into a jar, screw lid on tight, shake vigorously for 30 seconds, then microwave for 30 seconds to stabilize foam.
  5. Combine with coffee: Pour strong brewed coffee or espresso into a mug. Slowly pour frothed milk over coffee, holding back foam with a spoon. Spoon foam on top.
  6. Add the pumpkin base: Pour blended pumpkin mixture into the coffee and milk. Stir gently to combine.
  7. Top and serve: Add a generous dollop of whipped cream. Dust with a pinch of cinnamon and a sprinkle of pumpkin pie spice. Serve immediately.

Notes

For best results, blend the pumpkin base thoroughly to avoid lumps. Do not boil the milk. The pumpkin base can be made ahead and stored in the refrigerator for up to 5 days. Adjust sweetness and spice to taste.
