  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth (low-sodium)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup sour cream (full-fat)
  • 12 oz wide egg noodles
  • 2 tablespoons unsalted butter
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Start the pasta water: Fill a large pot with water, add a generous pinch of salt, and bring to a boil.
  2. Brown the ground beef: Heat a large skillet over medium-high heat. Add the ground beef and break it up with a wooden spoon. Cook undisturbed for 3-4 minutes until a brown crust forms, then stir and continue cooking until fully browned, about 5-6 minutes total. Transfer beef to a plate using a slotted spoon, leaving about 1 tablespoon of drippings in the pan.
  3. Sauté the aromatics: Reduce heat to medium. Add butter to the same pan. Once melted, add diced onion and sliced mushrooms. Cook for 5-7 minutes, stirring occasionally, until mushrooms are golden brown and have released their moisture. Add minced garlic and cook for 30 seconds until fragrant.
  4. Make the roux: Sprinkle flour over the mushrooms and onions. Stir constantly for about 1 minute until the mixture is pasty and clumpy.
  5. Build the sauce: Slowly pour in beef broth while whisking continuously. Add Worcestershire sauce and Dijon mustard. Bring to a gentle simmer, scraping up browned bits from the bottom of the pan. Cook for 2-3 minutes until the sauce thickens slightly and coats the back of a spoon.
  6. Cook the noodles: While the sauce simmers, add egg noodles to the boiling water. Cook according to package directions (usually 6-8 minutes for al dente). Drain in a colander and set aside. Do not rinse.
  7. Finish the stroganoff: Return the browned beef to the skillet. Stir together and let warm through for about 1 minute. Reduce heat to low, then remove the pan from the burner. Stir in sour cream until the sauce is smooth and velvety. Do not let it boil after adding sour cream.
  8. Taste and adjust: Season with salt and pepper to taste. Start with ½ teaspoon salt and ¼ teaspoon pepper, then adjust as needed.
  9. Serve immediately: Spoon the creamy ground beef mixture over the hot egg noodles. Garnish with fresh parsley if desired.

Notes

Don’t rush the browning of the beef for maximum flavor. Remove the pan from heat before adding sour cream to prevent curdling. Season as you go for layered flavor. The dish tastes even better the next day.
