These cozy eggnog cinnamon rolls with nutmeg glaze are soft, pillowy, and filled with warm holiday spices. Perfect for Christmas morning or any cozy weekend breakfast, they’re made with simple ingredients and can be prepped the night before.

  • 1/4 cup (50 g) granulated sugar
  • 1/4 cup (60 g) unsalted butter, melted and slightly cooled
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 3 1/2 cups (440 g) all-purpose flour, plus more for dusting
  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup (100 g) brown sugar, packed
  • 2 tablespoons ground cinnamon
  • 1/4 cup (60 g) unsalted butter, softened
  • Pinch of salt
  • 1 1/2 cups (180 g) powdered sugar
  • 3 tablespoons eggnog
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt

Instructions

  1. Warm the eggnog to about 110-115°F (43-46°C).
  2. In the bowl of a stand mixer, combine warm eggnog, 1 tablespoon of the sugar, and yeast. Let sit for 5-10 minutes until foamy.
  3. Add remaining sugar, melted butter, egg, and vanilla extract to the yeast mixture. Stir until combined.
  4. In a separate bowl, whisk together flour, salt, and nutmeg. Gradually add to wet mixture, mixing on low speed with dough hook. Knead on medium for 5-7 minutes until smooth and slightly sticky.
  5. Shape dough into a ball and place in a lightly greased bowl. Cover and let rise in a warm place for 1-1.5 hours until doubled.
  6. Mix brown sugar, cinnamon, and pinch of salt for filling. Set aside.
  7. Punch down dough and roll into a 12×18-inch rectangle on a floured surface.
  8. Spread softened butter over dough, leaving a 1-inch border on one long edge. Sprinkle cinnamon-sugar mixture over butter.
  9. Roll dough tightly into a log starting from the long edge opposite the border. Pinch seam to seal.
  10. Cut log into 12 equal pieces (about 1.5 inches thick).
  11. Place rolls in a greased 9×13-inch baking pan. Cover and let rise for 30-45 minutes until puffy.
  12. Preheat oven to 350°F (175°C). Bake rolls for 20-25 minutes until golden brown. Let cool in pan for 10 minutes.
  13. Whisk together powdered sugar, 3 tablespoons eggnog, vanilla extract, 1/4 teaspoon nutmeg, and pinch of salt for glaze. Adjust consistency as needed.
  14. Drizzle glaze over warm rolls. Serve immediately.

Notes

For best results, use full-fat eggnog and freshly grated nutmeg. The dough can be made ahead: assemble rolls, cover, and refrigerate overnight. Let sit at room temperature for 30 minutes before baking. Use unflavored dental floss for clean cuts. Rolls are best served warm.
