A hearty, hands-off chili made with pumpkin puree, black beans, and warm spices, simmered in a crockpot for a deeply flavorful and comforting meal. Perfect for busy weeknights and meal prep.

  • 15 oz can pumpkin puree (100% pure, not pumpkin pie filling)
  • Two 15 oz cans black beans, drained and rinsed
  • 14.5 oz can diced tomatoes (fire-roasted preferred), undrained
  • 1 medium yellow onion, diced
  • 34 cloves garlic, minced
  • 1 cup low-sodium vegetable or chicken broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano (Mexican oregano preferred)
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • Optional toppings: sour cream or Greek yogurt, shredded cheddar cheese, fresh cilantro, sliced avocado, diced red onion, lime juice

Instructions

  1. Dice the yellow onion and mince the garlic.
  2. Add the diced onion, minced garlic, pumpkin puree, drained and rinsed black beans, undrained diced tomatoes, and broth to a 5-6 quart crockpot.
  3. Sprinkle in the chili powder, ground cumin, smoked paprika, dried oregano, salt, and black pepper. Stir well until the pumpkin is evenly distributed.
  4. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours. Avoid lifting the lid during the first few hours.
  5. About 30 minutes before serving, taste and adjust seasoning. Add more salt, a pinch of cayenne for heat, or a splash of broth if too thick.
  6. Ladle into bowls and garnish with desired toppings. Serve hot.

Notes

For deeper flavor, sauté the diced onion and garlic in olive oil before adding to the crockpot. Bloom spices in a dry pan for 30-60 seconds for a more complex taste. If chili is too thin, remove lid during last 30 minutes or mash some beans to thicken. This chili tastes even better the next day and freezes well for up to 3 months.
