  • ¼ cup fresh cilantro (chopped)
  • Lime wedges (for serving)
  • ¼ cup Greek yogurt (for creamy drizzle)
  • 1 tablespoon lime juice (for creamy drizzle)
  • ¼ teaspoon chili powder (for creamy drizzle)

Instructions

  1. Start the rice: Rinse 1 cup of jasmine rice under cold water until the water runs clear. Combine with 1½ cups water and a pinch of salt in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork and set aside.
  2. Make the spice rub: In a small bowl, combine 2 teaspoons chili powder, 1 teaspoon smoked paprika, ½ teaspoon chipotle powder (if using), 1 teaspoon garlic powder, ½ teaspoon cumin, ½ teaspoon salt, and ¼ teaspoon black pepper. Stir until evenly distributed.
  3. Prep the salmon: Pat the salmon fillets dry with paper towels. Sprinkle the spice rub evenly over both sides, pressing gently to adhere. Let sit at room temperature for about 10 minutes.
  4. Warm the beans and corn: Drain and rinse the black beans. If using frozen corn, microwave for 1 minute or sauté in a dry pan over medium heat for 3-4 minutes until lightly charred. Set aside.
  5. Sear the salmon: Heat 2 tablespoons olive oil in a large skillet over medium-high heat. When the oil is shimmering, place the salmon fillets in the pan, skin-side down if they have skin. Cook for 4-5 minutes without moving them, until a deep golden-brown crust forms.
  6. Flip and finish cooking: Carefully flip the fillets and cook for another 3-4 minutes, until the salmon flakes easily with a fork and internal temperature reaches 145°F. In the last minute, squeeze the juice of one lime over the fillets. Remove from heat.
  7. Make the creamy drizzle (if using): In a small bowl, whisk together ¼ cup Greek yogurt, 1 tablespoon lime juice, ¼ teaspoon chili powder, and a pinch of salt. Set aside.
  8. Assemble the bowls: Divide the rice evenly among four bowls. Top each with a salmon fillet, a quarter of the black beans, a quarter of the corn, and sliced avocado. Sprinkle with fresh cilantro and add a lime wedge on the side. Drizzle with the creamy chili-lime sauce or serve on the side.

Notes
