  • 56 ripe peaches, peeled, pitted, and sliced (about 4 cups)
  • 1/4 cup granulated sugar (adjust based on peach sweetness)
  • 2 tablespoons brown sugar
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour (can swap with almond flour for gluten-free option)
  • 6 tablespoons unsalted butter, cold and cut into small cubes
  • 1/2 teaspoon ground cardamom
  • 1 teaspoon ground cinnamon
  • 1 tablespoon fresh lemon juice
  • Pinch of salt
  • Optional: 1/4 cup chopped pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel, pit, and slice the peaches into about 1/2-inch thick slices. Place them in a medium bowl.
  3. Add granulated sugar, lemon juice, cinnamon, and a pinch of salt to the peaches. Toss gently to coat and let sit for about 10 minutes.
  4. In a separate bowl, combine oats, flour, brown sugar, cardamom, cinnamon, salt, and chopped nuts if using.
  5. Add cold, cubed butter to the dry ingredients and cut it in using a pastry cutter, forks, or fingers until the mixture resembles coarse crumbs with some pea-sized bits.
  6. Lightly butter or oil a 10-inch cast iron skillet. Spread the peach mixture evenly in the skillet, including any juices.
  7. Sprinkle the oat streusel topping evenly over the peaches.
  8. Bake for 40-45 minutes until the topping is golden brown and crispy and the peach filling is bubbling around the edges.
  9. Cool slightly for about 10 minutes before serving.

Notes

If topping browns too fast, tent skillet loosely with foil after 30 minutes. For dairy-free, substitute butter with coconut oil or vegan butter. Frozen peaches can be used if thawed and drained. Preheat skillet for crisper bottom but handle carefully. Peeling peaches is easier by blanching briefly in boiling water then ice water.
