This cozy brown sugar glazed chicken meatloaf is a comforting weeknight dinner that comes together in under an hour. The sweet and tangy glaze caramelizes to perfection, while the meatloaf stays incredibly moist thanks to a secret ingredient—grated onion.

  • 1.5 lbs (680g) ground chicken
  • 1/2 cup (60g) breadcrumbs
  • 1 large egg
  • 1/4 cup (60ml) milk
  • 1/4 cup grated onion (about half a small onion)
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme (optional)
  • 1/2 cup (100g) packed brown sugar
  • 1/4 cup (60ml) ketchup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×5 inch loaf pan with cooking spray or oil.
  2. Make the glaze: In a small saucepan over medium heat, combine brown sugar, ketchup, Dijon mustard, apple cider vinegar, and garlic powder. Stir until sugar dissolves and mixture is smooth, about 2-3 minutes. Remove from heat and set aside.
  3. Grate the onion using a box grater until you have about 1/4 cup of onion pulp and juice. Do not drain the juice.
  4. In a large bowl, combine ground chicken, breadcrumbs, egg, milk, grated onion (with juice), minced garlic, Worcestershire sauce, salt, pepper, and thyme. Mix gently with your hands until just combined—do not overmix.
  5. Transfer the mixture to the prepared loaf pan. Press down gently to eliminate air pockets, but do not pack too tightly. Smooth the top with a spatula.
  6. Spoon about 1/3 of the glaze over the top of the meatloaf and spread evenly with a spoon or pastry brush. Reserve the remaining glaze.
  7. Place the loaf pan on a baking sheet and bake uncovered at 350°F (175°C) for 40 minutes.
  8. Remove the meatloaf from the oven and spoon another 1/3 of the glaze over the top. Spread evenly.
  9. Return to the oven and bake for another 10-15 minutes, until the internal temperature reaches 165°F (74°C) when measured in the center.
  10. Remove from the oven and let the meatloaf rest in the pan for 10 minutes.
  11. Carefully transfer the meatloaf to a cutting board. Slice into 1-inch thick pieces. Drizzle the remaining glaze (warmed if needed) over the slices before serving.

Notes

Don’t overmix the meat to keep it tender. Use a meat thermometer to ensure it reaches 165°F (74°C) without drying out. Let the meatloaf rest for 10 minutes before slicing to allow juices to redistribute. Double-glazing creates a thicker, caramelized crust. If the glaze starts to burn, tent with foil during the last 10 minutes of baking.
