  • 2 tablespoons olive oil
  • 1/2 teaspoon salt

  • 4 tablespoons unsalted butter
  • 1 medium yellow onion, diced (about 1.5 cups / 200 grams)
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
  • 1/4 teaspoon ground nutmeg (freshly grated if possible)
  • 1/8 teaspoon cayenne pepper (optional)
  • 4 cups vegetable broth (960 ml)
  • 1/2 cup full-fat coconut milk (120 ml) or heavy cream, plus more for drizzling
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Toss the cubed butternut squash with olive oil, salt, and pepper until evenly coated. Spread the cubes in a single layer on the baking sheet. Roast for 25 to 30 minutes, flipping halfway through, until the squash is tender and the edges are lightly caramelized.
  2. While the squash roasts, place the 4 tablespoons of butter in your large soup pot over medium heat. Swirl the pan occasionally as the butter melts. Once it smells nutty and the specks are a deep golden brown, immediately remove the pot from the heat. This takes about 4 to 6 minutes total.
  3. Return the pot to medium heat. Add the diced onion and cook for 4 to 5 minutes, stirring occasionally, until softened and translucent. Add the minced garlic, fresh thyme, nutmeg, and cayenne pepper if using. Cook for another minute until fragrant.
  4. Add the roasted squash to the pot, then pour in the vegetable broth. Stir everything together, scraping up any browned bits from the bottom of the pot. Bring the soup to a gentle boil, then reduce the heat to low and let it simmer for 10 minutes.
  5. Remove the pot from the heat. Using an immersion blender, puree the soup until completely smooth. If using a regular blender, let the soup cool for 5 minutes, then blend in batches.
  6. Stir in the coconut milk or cream. Taste and adjust seasoning with more salt, nutmeg, or cayenne as needed. If the soup seems too thick, add a splash more broth or water until it reaches your desired consistency.
  7. Ladle the soup into bowls. Drizzle a little extra coconut milk or cream on top, then swirl it with a toothpick for a pretty pattern. Sprinkle toasted pumpkin seeds, a few fresh thyme leaves, and a pinch of flaky sea salt. Serve hot with crusty bread or a grilled cheese sandwich.
