  • 1/2 cup (113 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 1/2 cup (100 g) light brown sugar, packed
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup (120 ml) buttermilk
  • 1/4 cup (56 g) unsalted butter, melted (for coating)
  • 1/2 cup (100 g) granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with a parchment paper circle. Grease the parchment too.
  2. Pour the apple cider into a small saucepan and bring it to a boil over medium-high heat. Reduce the heat to medium and let it simmer, stirring occasionally, until it reduces to about 1/4 cup (60 ml), about 10 to 12 minutes. Set aside to cool slightly.
  3. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3 to 4 minutes with an electric mixer on medium speed.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and the cooled reduced apple cider.
  5. In a separate medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  6. With the mixer on low speed, add about one-third of the flour mixture to the butter mixture, mixing until just combined. Add half the buttermilk, mixing again. Repeat with another third of the flour, the remaining buttermilk, and finish with the last of the flour. Mix until just combined. Use a rubber spatula to give the batter a final fold.
  7. Pour the batter into the prepared pan and smooth the top. Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool for another 10 minutes.
  8. While the cake cools, mix the granulated sugar and cinnamon together in a shallow bowl. Melt the butter in a small bowl.
  9. When the cake is still warm but not fragile, brush the top and sides generously with melted butter. Sprinkle the cinnamon sugar mixture over the cake, pressing gently to help it stick.
  10. Let the coated cake cool completely on the wire rack before slicing.

Notes

Don’t skip reducing the cider. Apply the coating while the cake is warm but not hot. Use room temperature ingredients for best results. Spoon and level the flour to avoid a dense cake.
