Comforting Slow Cooker Lasagna Soup

A simplified, one-pot version of classic lasagna that combines rich tomato broth, savory Italian sausage, tender noodles, and creamy ricotta pockets. It offers the comfort of baked pasta with the ease of slow cooker soup.

  • 1 pound Italian sausage (mild or hot)
  • 1 medium yellow onion, finely diced
  • 4 cloves garlic, minced
  • 1 can (28-ounce) crushed tomatoes
  • 2 tablespoons tomato paste
  • 4 cups low-sodium chicken broth
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 8–10 lasagna noodles, broken into pieces
  • 15 ounces ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup heavy cream
  • 1 egg (optional, for binding ricotta)
  • Fresh basil, chopped
  • Grated Parmesan cheese, for serving
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium-high heat. Add Italian sausage and cook until browned, breaking it apart with a wooden spoon. Drain excess grease if necessary, then transfer meat to the slow cooker.
  2. In the same skillet, sauté the diced onion until softened (about 3 minutes). Add minced garlic and cook for 30 seconds until fragrant. Scrape the pan bottom and add the onion and garlic to the slow cooker.
  3. Pour in crushed tomatoes, tomato paste, chicken broth, Italian seasoning, and red pepper flakes. Stir well to combine.
  4. Cover and cook on Low for 6-8 hours or High for 4 hours to allow flavors to meld.
  5. While the soup simmers, mix ricotta cheese, half of the mozzarella, the egg (if using), and a pinch of salt and pepper in a small bowl. Set aside.
  6. During the last 30 minutes of cooking, add broken lasagna noodles to the slow cooker. If using no-boil noodles, add them in the last 20 minutes.
  7. Stir in the heavy cream. Drop spoonfuls of the ricotta mixture into the hot soup without stirring them in completely to create pockets. Sprinkle remaining mozzarella on top.
  8. Let the soup sit for 5 minutes to thicken slightly before serving. Garnish with fresh basil and grated Parmesan.
