  • 2 tablespoons fresh lemon juice
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1 cup light brown sugar, packed
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Peel, core, and slice apples into 1/4-inch thick slices. Place in a large mixing bowl.
  3. Add lemon juice, granulated sugar, cinnamon, ginger, nutmeg, cornstarch, and vanilla extract to the apples. Toss gently until evenly coated.
  4. Pour the apple mixture into a 9×13 inch baking dish and spread evenly.
  5. In a medium bowl, whisk together oats, flour, brown sugar, and salt.
  6. Add cold cubed butter to the dry ingredients. Use a pastry cutter or fingers to cut butter in until the mixture resembles coarse crumbs with pea-sized butter chunks.
  7. Sprinkle the topping evenly over the apples and press down gently.
  8. Bake for 45-55 minutes until topping is golden brown and juices are bubbling. Cover with foil if topping browns too quickly.
  9. Cool for 15-20 minutes before serving to allow juices to thicken.

Notes

Ensure butter is cold for a flaky topping. Slice apples uniformly for even cooking. Let the crisp cool completely to allow the filling to set. Can be made gluten-free by using GF flour and certified GF oats. Can be made dairy-free by using vegan butter.
