Ingredients

  • Corned beef brisket (3-4 lbs)
  • Dark beer (12 oz)
  • Beef broth (2 cups, low-sodium)
  • Yellow onions (2 large, quartered)
  • Garlic cloves (6-8, smashed)
  • Bay leaves (3)
  • Black peppercorns (1 tbsp)
  • Mustard seeds (1 tsp)
  • Whole cloves (4-5)
  • Green cabbage (1 large head, cut into 8 wedges)
  • Carrots (4-5, peeled and cut into 2-inch chunks)
  • Small potatoes (1 lb, Yukon Gold or red, halved if large)

Instructions

  1. Toast the spices: In a small dry skillet over medium heat, add black peppercorns and mustard seeds. Shake for 1-2 minutes until fragrant and mustard seeds start to pop. Remove from heat and set aside.
  2. Prepare the brisket: Rinse corned beef under cold water to remove excess brine. Pat dry. Trim thick fat cap if needed, leaving some. Discard the spice packet.
  3. Layer the aromatics: Place quartered onions and smashed garlic in the bottom of a 6-7 quart slow cooker. Add bay leaves, toasted peppercorns, mustard seeds, and whole cloves.
  4. Add the liquid: Pour dark beer and beef broth over the aromatics. Stir gently.
  5. Cook the brisket: Place brisket fat-side up on top of onions and spices. Cover and cook on low for 8-10 hours or on high for 5-6 hours. Flip brisket halfway through.
  6. Add the vegetables: About 30-40 minutes before serving, remove brisket to a cutting board and tent with foil. Add carrot chunks and potato halves to the slow cooker broth. Nestle cabbage wedges in, pushing them down. Cover and cook on high for 30-40 minutes until tender.
  7. Rest and slice the brisket: Let brisket rest for 10-15 minutes. Slice against the grain into 1/2-inch thick slices.
  8. Serve: Arrange sliced brisket on a platter with cabbage, carrots, and potatoes. Ladle some cooking broth over everything. Discard bay leaves and whole cloves before serving.

Notes

For best results, cook on low for 8-10 hours. Add cabbage late to avoid mushiness. Let brisket rest before slicing. Toasting spices enhances flavor. Use low-sodium broth to control salt. Leftovers keep for 4 days in the fridge; brisket freezes well for up to 3 months.
