These loaded deviled eggs are creamy, crunchy, and topped with crispy bacon and fresh chives. They’re the ultimate game day finger food that disappears fast.

  • 12 large eggs (hard-boiled and peeled)
  • 1/3 cup mayonnaise
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon yellow mustard
  • 1 teaspoon white vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (plus extra for garnish)
  • 4 slices bacon, cooked crisp and crumbled
  • 1/4 cup sharp cheddar cheese, finely shredded
  • 2 tablespoons fresh chives, chopped
  • Optional toppings: pickled jalapeños, hot sauce drizzle, or everything bagel seasoning

Instructions

  1. Hard-boil the eggs: Place eggs in a single layer in a large pot, cover with cold water by an inch. Bring to a rolling boil, cover, turn off heat, and let sit for 12 minutes. Transfer to an ice bath and cool for at least 5 minutes.
  2. Peel and halve the eggs: Tap each egg to crack the shell, roll between palms, and peel starting from the wider end. Rinse, pat dry, slice in half lengthwise, remove yolks to a medium bowl, and arrange whites on a platter.
  3. Cook the bacon: In a skillet over medium heat, cook bacon until crispy, 6-8 minutes. Drain on paper towels, then crumble.
  4. Make the filling: Press yolks through a fine-mesh sieve twice into a bowl. Add mayonnaise, cream cheese, mustard, vinegar, salt, pepper, and paprika. Mash and stir until smooth and creamy. Adjust seasoning to taste.
  5. Fill the eggs: Transfer filling to a piping bag or zip-top bag with corner snipped. Pipe into each egg white half, mounding slightly. Alternatively, use a small spoon.
  6. Add toppings: Sprinkle crumbled bacon, shredded cheddar, and chopped chives evenly over filled eggs. Dust with paprika. Add optional toppings if desired.
  7. Chill and serve: Cover with plastic wrap and refrigerate at least 30 minutes before serving. Serve cold or at room temperature.

Notes

Use older eggs for easier peeling. The sieve step is key for a smooth filling. Let cream cheese soften to avoid lumps. Pipe filling for a prettier presentation. Assemble just before serving if making ahead.
