  • 4–6 ears of corn, shucked
  • 2 tablespoons neutral oil (e.g., avocado or light olive oil)
  • 1 teaspoon kosher salt, plus more to taste
  • 2 large ripe avocados
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup red onion, finely diced
  • 1 small jalapeño or serrano pepper, seeded and minced
  • 3–4 tablespoons fresh lime juice
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon honey or agave
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon freshly cracked black pepper
  • 1/4 cup feta or cotija cheese, crumbled (optional)
  • Chili powder or Tajín for dusting (optional)

Instructions

  1. Shuck the corn, removing all silk, and rinse under cold water. Pat dry thoroughly.
  2. Brush the corn ears lightly with neutral oil and sprinkle with a pinch of salt.
  3. Preheat grill to medium-high heat. Grill corn directly on grates for 10-12 minutes, turning every 2-3 minutes until charred in spots and tender.
  4. Remove corn from grill and let cool on a cutting board. Once cool enough to handle, slice kernels off the cob.
  5. While corn cools, dice red onion, mince jalapeño, and chop cilantro.
  6. In a small bowl, whisk together lime juice, extra virgin olive oil, honey, cumin, salt, and pepper until emulsified.
  7. In a large bowl, combine corn kernels, red onion, jalapeño, and cilantro.
  8. Slice avocados and scoop them into the bowl.
  9. Pour dressing over the salad and gently toss to combine, being careful not to mash the avocado.
  10. Chill in the refrigerator for at least 10 minutes before serving to allow flavors to meld.
