This Best Game Day Chili Cheese Dip with Fritos is the result of letting go of chef-y pride and listening to a kid who just wanted cheese and chips. It’s not fancy, not fussy, and is the first bowl to empty at every party—creamy, meaty, with that irresistible Fritos crunch in every single bite.

  • 1 pound ground beef (80/20 works great; drain excess fat after browning)
  • 1 (15-ounce) can chili (I prefer Wolf Brand or Hormel with beans; no beans works too)
  • 8 ounces cream cheese, softened (full-fat is best; low-fat can be grainy)
  • 2 cups shredded sharp cheddar cheese (freshly shredded melts better than pre-shredded)
  • 1 cup shredded Monterey Jack cheese (adds excellent melt and mild flavor)
  • 1 teaspoon chili powder (for a little warmth, not heat)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper, to taste
  • 1 (9.25-ounce) bag Fritos Scoops (the scoop shape is non-negotiable here; regular Fritos just don’t hold the dip the same way)
  • Optional toppings: sliced jalapeños, diced tomatoes, chopped green onions, sour cream, or fresh cilantro

Instructions

  1. Preheat your oven to 375°F (190°C). This gives it time to come to temperature while you prep everything else.
  2. Brown the ground beef. In a large skillet over medium-high heat, cook the ground beef until no longer pink, breaking it into small crumbles as it cooks. This takes about 6-8 minutes. Drain off any excess fat, leaving just a tablespoon or so for flavor. Season with a pinch of salt and pepper.
  3. Add the chili and seasonings. Reduce heat to medium. Stir in the can of chili, chili powder, garlic powder, and onion powder. Let this simmer together for 2-3 minutes, stirring occasionally. The flavors need a minute to get acquainted.
  4. Soften the cream cheese. Cut the cream cheese into small cubes and add it to the skillet. Stir continuously until the cream cheese has fully melted into the beef and chili mixture. This takes about 2 minutes. Do not rush this step—lumps of unmelted cream cheese are not what we are after. The mixture should look creamy and cohesive, not separated.
  5. Layer the cheese. Remove the skillet from heat. Sprinkle half of the shredded cheddar and half of the Monterey Jack over the top. Gently fold the cheese into the mixture until just combined. You want some cheese to remain visible for that gooey top layer.
  6. Top with remaining cheese. Sprinkle the rest of the cheddar and Monterey Jack evenly over the surface. Do not stir this layer in—it will form that golden, bubbly crust you are looking for.
  7. Bake. Transfer the skillet to the preheated oven and bake for 15-18 minutes, until the cheese is melted, bubbly, and starting to brown around the edges. The center should be hot and slightly jiggly.
  8. Rest and serve. Remove from the oven and let it rest for 5 minutes. This is crucial—the dip needs a few minutes to set so it does not slide off your Fritos. Garnish with optional toppings and serve immediately with Fritos Scoops.

Notes

Do not skip draining the beef to avoid a greasy dip. Softening the cream cheese is non-negotiable—let it sit at room temperature for 20 minutes or microwave in 10-second bursts. Shred your own cheese for the best melt. Start checking the dip at the 12-minute mark as ovens vary. For a party, keep the dip warm on a warming tray or low-heat burner. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in a 350°F oven for 10-15 minutes or in the microwave.
