  • 1 bunch fresh asparagus, trimmed
  • 1 pint cherry tomatoes
  • 1 pound baby potatoes (Yukon Gold or red), halved
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and halve the baby potatoes. Trim the woody ends off the asparagus. Leave the cherry tomatoes whole.
  3. Toss the potatoes with olive oil, oregano, salt, and pepper. Spread them in a single layer on a large sheet pan. Roast for 10 minutes.
  4. While the potatoes roast, make the lemon garlic butter: In a small bowl, combine melted butter, minced garlic, lemon zest (about 1 teaspoon), and lemon juice (about 2 tablespoons). Whisk together.
  5. Pat the salmon fillets dry with paper towels. Season both sides with salt and pepper.
  6. After 10 minutes, remove the pan from the oven. Add the asparagus and cherry tomatoes around the potatoes. Place the salmon fillets in the center, leaving space between each piece.
  7. Brush the lemon garlic butter over the salmon, using all of it.
  8. Return the pan to the oven and roast for 12-15 minutes, until the salmon is opaque and flakes easily with a fork, and vegetables are tender.
  9. Optional: Switch the oven to broil for the last 1-2 minutes for browned edges. Watch carefully.
  10. Let rest for 2 minutes before serving. Garnish with fresh parsley and extra lemon if desired.
