  • 8 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced bell pepper
  • 1/2 cup chopped spinach
  • 1/4 cup diced onion
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Optional: 1/4 cup cooked crumbled sausage or bacon

Instructions

  1. Preheat your oven to 375°F (190°C). Spray a 12-cup muffin tin generously with non-stick cooking spray.
  2. In a large bowl, whisk together the eggs and milk until fully combined but not overbeaten (about 20 seconds).
  3. Add salt, pepper, and garlic powder to the egg mixture and whisk again to combine.
  4. Dice the bell pepper and onion into small pieces (about 1/4 inch). Roughly chop the spinach.
  5. Fold the bell pepper, spinach, onion, and cheddar cheese into the egg mixture. If using cooked meat, fold it in now.
  6. Pour the mixture into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake for 15-18 minutes, until the tops are set and lightly golden, and a toothpick inserted in the center comes out clean.
  8. Let the muffins cool in the tin for 5 minutes. Run a knife around the edges, then gently remove them. Transfer to a wire rack to cool completely if storing.

Notes

Don’t overbeat the eggs to avoid deflation. For frozen spinach, thaw and squeeze dry to prevent sogginess. Let muffins rest in the tin for 5 minutes for easy removal. These freeze well for up to 3 months.
