  • 1/4 teaspoon Black Pepper
  • 1/2 teaspoon Salt
  • 3 tablespoons Pure Maple Syrup
  • 1 tablespoon Olive Oil
  • 1/4 teaspoon Cinnamon
  • Pinch of Flaky Sea Salt
  • Fresh Thyme or Rosemary (optional, for garnish)
  • Crumbled Feta or Goat Cheese (optional, for garnish)
  • Pomegranate Arils (optional, for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Wash the delicata squash thoroughly. Trim off the tip and stem end. Slice the squash crosswise into 1/2-inch thick rings. Remove the seeds and stringy pulp from the center of each ring.
  3. In a large bowl, whisk together the cornstarch, garlic powder, smoked paprika, salt, and pepper. Add the squash rings and drizzle with 2 tablespoons of olive oil. Toss with your hands until each ring is evenly coated.
  4. Arrange the coated squash rings in a single layer on the prepared baking sheet, ensuring they are not touching. Roast for 15-20 minutes, until the bottoms are golden brown and the rings are starting to soften.
  5. While the rings are roasting, make the glaze: In a small bowl, whisk together the maple syrup, 1 tablespoon of olive oil, and the cinnamon.
  6. Remove the baking sheet from the oven. Brush the maple glaze over the top of each ring, then flip and brush the other side. Return the pan to the oven and roast for another 10-15 minutes, until the glaze is bubbly and caramelized and the edges are deep golden brown and crispy.
  7. Remove from the oven and let the rings cool on the baking sheet for 2-3 minutes. Transfer to a serving platter and sprinkle immediately with flaky sea salt and fresh herbs, if using. Serve warm.

Notes

Don’t overcrowd the pan! If doubling the recipe, use two baking sheets or roast in batches. The cornstarch is essential for crispiness—do not skip it. Keep a close eye on the glaze during the second roast to prevent burning. For best results, use a heavy-duty baking sheet that won’t warp.
