This banana bread started as a mistake but became a staple. It’s simple, affordable, and incredibly forgiving, with a perfect tender crumb and crackly top. Made with everyday ingredients, it’s great for breakfast, snacks, or lunchboxes.

  • 3 medium overripe bananas, mashed (about 1 ½ cups)
  • 1 ½ cups all-purpose flour, spooned and leveled
  • ⅔ cup granulated sugar
  • ⅓ cup unsalted butter, melted and slightly cooled
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup optional add-ins (chocolate chips, walnuts, or blueberries)

Instructions

  1. Preheat the oven to 350°F (175°C). Position the rack in the center. Line a 9×5-inch loaf pan with parchment paper or grease it well with butter.
  2. Mash the bananas in a large mixing bowl with a fork until mostly smooth but with a few small lumps. You should have about 1 ½ cups.
  3. Pour the melted butter over the mashed bananas and stir until combined.
  4. Add the sugar, eggs, and vanilla extract. Whisk until smooth and uniform.
  5. In a small bowl, whisk together the flour, baking soda, and salt.
  6. Add the dry ingredients to the wet ingredients and fold gently with a rubber spatula until no streaks of flour remain. Do not overmix.
  7. If using add-ins, gently fold them in now.
  8. Pour the batter into the prepared loaf pan and spread evenly. Tap the pan gently on the counter to release air bubbles.
  9. Bake for 55 to 65 minutes, until the top is deep golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with aluminum foil after 40 minutes.
  10. Cool in the pan for 10 minutes, then lift out using parchment overhang and cool completely on a wire rack before slicing.

Notes

Use the darkest bananas you can find for best flavor. Don’t overmix the batter. Let the bread cool completely before slicing to avoid a gummy texture. The flavor improves overnight. To toast leftover slices, lightly toast and spread with butter.
