This brown sugar pineapple glazed ham is the ultimate holiday centerpiece. With a glossy, caramelized crust and impossibly tender meat, it’s surprisingly simple to make and feeds a crowd.

  • 1 (8-10 pound) bone-in, fully cooked spiral-cut ham
  • 30–40 whole cloves
  • 1 cup packed light brown sugar
  • 1 (20-ounce) can crushed pineapple, undrained
  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • Pinch of salt
  • 1 (20-ounce) can pineapple rings, drained
  • Maraschino cherries, drained (optional)

Instructions

  1. Remove ham from refrigerator 1 hour before cooking. Preheat oven to 325°F (163°C).
  2. Unwrap ham, rinse quickly under cool water, and pat dry. Place flat-side down on a rack in a roasting pan.
  3. Score the surface of the ham in a diamond pattern with shallow cuts about 1/4-inch deep and 1 inch apart.
  4. Press whole cloves into the center of each diamond, just until the head is visible.
  5. In a small saucepan, combine brown sugar, undrained crushed pineapple, honey, Dijon mustard, apple cider vinegar, cinnamon, ground cloves, and salt. Whisk until smooth.
  6. Bring glaze to a gentle simmer over medium heat, stirring occasionally. Cook for 5-7 minutes until slightly thickened and glossy. Remove from heat.
  7. Cover ham loosely with aluminum foil and roast for 1 hour 30 minutes, basting with pan juices halfway through.
  8. Remove ham from oven, discard foil, and brush a generous layer of glaze over the entire surface.
  9. Return ham to oven, uncovered, and increase temperature to 400°F (204°C). Roast for 30-45 minutes, basting with glaze every 10-15 minutes, until internal temperature reaches 140°F (60°C).
  10. Remove ham from oven. If using, arrange pineapple rings on top, securing with toothpicks, and place a cherry in the center of each ring.
  11. Let ham rest for 15-20 minutes before carving.
  12. Carve and serve, drizzling with remaining glaze.

Notes

Score the ham before studding with cloves to ensure flavor penetration. Baste frequently during the final glazing stage for a sticky crust. Let the ham rest before slicing to keep it juicy. Leftovers can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
