  • 1 pound ground beef (80/20 works well)
  • 1 (15-ounce) can diced tomatoes (fire-roasted preferred, undrained)
  • 1 (15-ounce) can black beans (rinsed and drained)
  • 1 (15-ounce) can corn (drained)
  • 1 (1-ounce) packet taco seasoning (mild preferred)
  • 2 cups beef broth (low-sodium preferred)

Instructions

  1. Brown the ground beef (optional but recommended): Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until no longer pink, about 5-7 minutes. Drain off excess fat.
  2. Add everything to the crockpot: Transfer the browned beef (or raw beef) to your crockpot. Add the can of diced tomatoes (with juices), rinsed black beans, drained corn, taco seasoning, and beef broth. Stir until well combined.
  3. Cook low and slow: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until hot and bubbly and flavors have melded.
  4. Taste and adjust: Add salt and pepper if needed (about 1/2 teaspoon salt and a few grinds of black pepper). If too thick, add more broth; if too thin, cook uncovered for 15-20 minutes.
  5. Serve with toppings: Ladle into bowls and let everyone customize with shredded cheese, sour cream, diced avocado, fresh cilantro, crushed tortilla chips, and lime wedges.

Notes

For a thicker soup, mash some black beans against the side of the crockpot before serving. Leftovers taste even better the next day. Freezes well for up to 3 months.
